Berbere Spice

Berbere is an Ethiopian spice mix that is used in many traditional Ethiopian dishes such as Doro Wat and Mesir Wat (lentils). The combination of spices varies, but some of the primary spices are cardamon, coriander, fenugreek, and allspice. Chilies are commonly the heat element of choice in the spice mix, but I use cayenne in my version. No matter what you choose to use, the key to a good Berbere is warm and robust flavors. I keep a jar of this on hand at all times, as I use it not only for Ethiopian inspired dishes, but I also use it on vegetables, meat, poultry, and fish. A pinch of Berbere adds a nice kick to your scrambled eggs too.


1/2 – tsp. ground ginger
1/4 – tsp. cardamon
1/4 – tsp. fenugreek
1/4 – tsp. nutmeg
1/4 – tsp. coriander
1/4 – tsp. cinnamon
1/8 – tsp. ground cloves
1/8 – tsp. allspice
1 – tbls. salt
1 – tbls. cayenne pepper
1 – tbls. sweet paprika


Mix all the spices together and store in a glass jar.
