It is common for many of us to use store bought, seasoned breadcrumbs for breading chicken cutlet or fish filet, and it is tasty and easy to use. I used to use the pre-seasoned bread crumbs, but I discovered how easy they are to make, and they taste great too. Seasoning the bread crumbs gives you control on what goes into them, especially the quantity of salt.
You can use any bread that you have in the house. The bread is best when it is a little dry, but not stale. If the bread is too fresh, you can place it on a cookie sheet and put it in a 250o oven for about 15 minutes. This will dry it out and make it crumble better.
Take the slices of bread and cut them into cubes and place it in a food processor or blender to make the crumbs. Now it is time to season them. Simply combine all the following ingredients together and mix. They are ready to use.
Panko bread crumbs are a great store bought substitute. They have a nice crunch which makes the the final result even better.
2 – cups bread crumbs
1 – tsp. oregano
1 ½ – tbls. fresh parsley chopped
½ – tps. salt
½ – tsp. black pepper
1 – tsp. garlic powder
1 – tsp. Adobo seasoning
¼ – cup pecorino romano cheese*
½ – tsp. fresh thyme (optional)
*Note: add the pecorino cheese right before you are ready to use the bread crumbs. If you want to make a batch of bread crumbs to have on hand, store them in a sealed container without the cheese.
