Soffritto is the base of many dishes. The word soffritto comes from the Italian verb soffriggere, meaning to sauté, cook slowly. The soffritto is a combination of onion, celery, and carrots. It can be used to enhance the flavor of sauces, stews, soups and more.
To make the soffritto start with:
1 – medium onion
2 – carrots
2 – stalks celery
salt and black pepper to taste
Dice the vegetables (you can dice them by hand or you can use a food processor). Heat a medium sized skillet on medium heat, then add olive oil, once it is heated add the onion first. Sauté until they start to soften, about 2-3 minutes. Add the celery and carrot and continue to sauté until the vegetables become soft and begin to caramelize, about 10 minutes. Sprinkle with a little salt and black pepper.
